GINGER-GLAZED CARROTS A: OK AB: OK B: OK O: OK

  • 1/4 c Ginger fresh, chopped fine
  • A: HB AB: N B: HB O: N
  • 1/4 c Honey
  • A: N AB: N B: N O: N
  • 1/4 c Water
  • A: HB AB: HB B: HB O: HB
  • 2 c Carrots sliced or julienne strips
  • A: HBAB: NB: HB O: N

    Peel some fresh ginger and chop up fine. Mix with an equivalent volume of honey, then with an equivalent volume of water.

    Bring to the boil. Add some sliced carrots, or carrots cut into julienne strips. Generally you need about two cups of carrots to about 1/2 cup of honey mixture.

    Boil until the liquid reduces to form a glaze and the carrots are still quite crunchy. If you like uncrunchy carrots, use more water in your mix so that it takes longer to boil off.
