LEMON RED ONION & PARSLEY SALAD A: OK AB: OK B: OK O: OK

  • 4 large Lemons thin-shinned
  • A: HB AB: HB B: N O: N
  • 1 large Onion, red
  • A: HB AB: N B: N O: HB
  • 1 1/2 bunches Parsley, flat-leafed
  • A: N AB: HB B: HB O: HB
  • Salt to taste
  • A: N AB: N B: N O: N
  • Lemon Juice to taste
  • A: HB AB: HB B: N O: N

    Peel lemons, cutting away all white pith, then cut lemon flesh into small dice. Peel red onion and cut into slices. Cut each slice into small dice. Combine diced lemon and diced onion in a bowl.

    Coarsely chop flat-leafed parsley and add to other ingredients. Season with salt, moisten with a little lemon juice and mix well. chill until

    Serves 4!

    I don't know that I could eat a full salad portion of this. Maybe a tablespoon as a relish.
