Add water mixture to rice and add lentils. Stir. Bring to a boil, cover tightly, reduce heat to low and simmer for 30 minutes.
Preheat oven to 350 degrees.
Take lid off saucepan, stir in salt, nuts and raisins. Coat a baking dish with remaining 1 Tbsp. oil. Pour in rice mixture. Cover and bake for 25-30 minutes. Serves 4-6.
