Let cool 5 minutes and squeeze out as much remaining milk as possible. Transfer milk to stove and bring to boil over medium-hi heat, stir constantly.
When milk boils reduce heat to medium and simmer for about 7 minutes. Add any flavorings you desire.
At this point you can place it in the refrigerator or cool it by placing pan in circulating cold water for 10-15 minutes. This is supposed to help it keep longer and give it a better flavor.
It's pretty easy - it only takes me a little over half an hour to make now that I've done it a few times.
To make soy milk measure out 1 1/2 cups beans. Wash & rinse 3 times. Soak for 10 hours in 4-6 cups water. Divide the beans into thirds.
Preheat blender or food processor bowl by pouring in boiling water and letting it set for a minute. Empty blender and process for 1 minute on hi: 1 portion of beans and 2 cups boiling water.
Set a colander in a large pan or bowl and line it with a moistened pressing sack (I use an old white pillow case). Pour pureed beans into sack. Repeat process with remaining portions of beans.
Rinse blender with 1/4 C. boiling water and pour into sack. Twist sack closed and press with a potato masher or glass jar. Press out as much liquid as possible.
But I haven't been able to flavor it in a way that I can stand to drink it. It's wonderful to cook with, but I've been continuing to buy the Edensoy to drink. Anyone have any ideas how to flavor it?
