ANOTHER HOMEMAKE SOY MILK A: OK AB: OK B: OK O: OK

  • 1 Cup Soybeans
  • A: HB AB: HB B: HB O: O
  • 6 Cups Water boiling
  • A: HB AB: HB B: HB O: HB
  • 2-3 T Honey
  • A: N AB: N B: N O: N
  • (or other Sweetener)

Chop half the beans in a food processor until very fine and add 2 cups boiling water. Keep on processing until the beans and water are mixed well.

Pour this through a cloth-lined sieve. Squeeze the cloth to get the most milk out. Repeat with the other half, and then put all the beans and remaining 2 cups water through the processor again, and pour through the sieve.

Boil the milk in the microwave. When it has boiled, add 1 tsp salt, and 2-3 tbs honey or malted sweetner. I added honey without the salt, and it did not taste good, then I added the salt and it made a difference.

It is still not the same as the store-bought milk, but close. Does anyone know if the boiling time makes a difference? The milk did not taste right after cooking for 10 minutes in the microwave, so I put it back for another 10.

The taste improved - I just wonder if I should have boiled it longer?

I then used the leftover beans and made burgers with it. I added Chopped onion, garlic, some spelt flour, 1 egg, salt soy sauce. I was surprised - it tasted good. I usually do not like the taste of soy beans, but this was fine.
